Pineapple Banana Cream Soda

A sweet and zesty splash of summer. Recipe by Cyrenthia Ngueya.
Combine equal parts boiling water and sugar.
Once the sugar is dissolved, add banana extract.
Keep refrigerated for up to 10 days.
In a 12 oz. high ball glass, add pineapple juice, syrup, and bitters. Stir to incorporate.
Fill ½ way with crushed ice.
Fill the glass to the ¾ mark with soda water.
Add espresso and oatmilk.
Garnish with pieces of the pineapple crown and stir before drinking.
